little sugar: firmer, drier, paler
What happens
Sugar binds water, slows and protein coagulation, and browns. Less sugar makes baked goods firmer, drier and paler.
Rules of thumb
- Reduce sugar by a quarter at most, otherwise the texture suffers.
- More sugar in custards makes them curdle later.
