Finishing pasta in the sauce

Also searched as: tossing pasta, pasta in the pan

In short: Drain pasta 1–2 minutes early and finish it in the sauce with a little pasta water: it takes on flavour and the sauce clings.

Picture it

Like bread dipped in soup: it takes up whatever is around it last.

What happens

In the last minutes the still absorbs liquid. If it cooks in the sauce rather than the water, it soaks up sauce rather than water. At the same time it releases starch which, together with the pasta water, binds fat and liquid into a silky sauce.

Why it matters

Drained pasta with sauce spooned on top stays bland, and the sauce slides off.

How it’s done

Sequence · Step 1 of 4
1234

Save a cup of pasta water.

All steps as a list
  1. Save a cup of pasta water.
  2. Drain the pasta 1–2 minutes before the packet time.
  3. Add it to the hot sauce with a splash of pasta water.
  4. Toss and cook for 1–2 minutes until the sauce is glossy and clings to the pasta.

Rules of thumb

  1. Sauce too thick? More pasta water. Too thin? Keep tossing, the starch will bind it.
